After searching for a long time, I have been fortunate enough to get hold of the seeds of the white and pink fleshed Dragon Fruit - Hylocereus undatus
Dragon Fruit, Pitaya - Hylocereus undatus
Dragon Fruit, Pitaya can be found from Texas through to Mexico down to Peru and Argentina. The French have introduced Dragon Fruit to Vietnam 100 years ago and have been growing them commercially for many years. They were originally grown for the kings and wealthy families in Vietnam. It is now cultivated around the world in tropical regions.
Dragon Fruit is a night flowering cactus. The flowers are very fragrant and are used in Mexico to perfume the night air in their courtyards.
A friend of mine who grows this amazing cactus told me that it has climbed onto her tree. Dragon fruit may also grow over the ground or climb onto trees using aerial roots.
Pitaya is related to epiphyllum and likes tropical or subtropical climates. It will tolerate short periods of frost, but prolonged cold will damage or kill the cactus.

Cut the ripe fruit in half, length wise and scoop the crisp flesh out with a teaspoon. The fruit is delicious eaten chilled. Flavour is delicately sweet and very refreshing. You can use the flesh in fruit salads, flavour drinks and pastries, set in jellies, mixed with milk, added to fruit juices, sherbets, frozen into iced delicacies and made into jams. Unopened flower buds are cooked and eaten as vegetables.Dragon Fruit can be used in any way Kiwi Fruit is used.
My friend had such a good crop of dragon fruit that she put them in the juicer added a little vodka (or whatever you like) and ice cubes for an alcoholic drink. She had a party at the time and her guests loved it.
You could use a little scoop and scoop the dragon fruit flesh out in little balls. Top dress with nuts, ice cream and/or fresh cream. What a delicious sweet.
